Vegan Gingerbread Bundt Cake

Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/2 cup unsweetened applesauce
- 1/2 cup molasses
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup non-dairy milk such as almond or soy
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
Instructions:
Preheat oven to 350F 175C
Grease a bundt cake pan
In a bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg
In another bowl, mix applesauce, molasses, brown sugar, vegetable oil, non-dairy milk, apple cider vinegar, and vanilla extract until well combined
Gradually add the dry ingredients into the wet ingredients, stirring until just combined
Be careful not to overmix
Pour the batter into the prepared bundt pan
Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean
Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely
Optional: Dust with powdered sugar or drizzle with a glaze before serving
