Quinoa Breakfast Cups



Delicious and nutritious gluten-free quinoa breakfast cups loaded with fresh berries and nuts. A perfect way to start your day!

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup almond milk
  • 3 large eggs
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup fresh berries blueberries, raspberries, or strawberries
  • 1/4 cup chopped nuts almonds, walnuts, or pecans

Instructions:

Preheat oven to 350F 175C

In a saucepan, bring water to a boil and add rinsed quinoa

Reduce heat, cover, and simmer for 15 minutes or until water is absorbed

In a bowl, whisk together almond milk, eggs, melted coconut oil, vanilla extract, cinnamon, and salt

Combine the cooked quinoa with the wet mixture and stir well

Grease a muffin tin and spoon the quinoa mixture into each cup, creating cups

Bake for 20-25 minutes or until the edges are golden and the cups are set

Allow the cups to cool for a few minutes, then gently remove them from the muffin tin

Fill each cup with fresh berries and top with chopped nuts

Serve warm and enjoy your gluten-free, sugar-free quinoa breakfast cups!
