Keto Low Carb Ice Cream

Ingredients:

  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • 1/2 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon xanthan gum
  • Pinch of salt

Instructions:

In a mixing bowl, whisk together heavy cream, almond milk, powdered erythritol, vanilla extract, xanthan gum, and salt until well combined

Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency

Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours or until firm
