Keto Cherry Buttermilk Popsicles
These keto-friendly popsicles are bursting with cherry flavor and creamy buttermilk goodness. They're perfect for a refreshing treat on a hot day while sticking to your low-carb diet.
Ingredients:
- 1 cup unsweetened almond milk
- 1 cup full-fat coconut milk
- 1 cup fresh or frozen cherries, pitted
- 1/4 cup powdered erythritol or sweetener of choice
- 1/2 teaspoon vanilla extract
- 1/4 cup buttermilk or unsweetened almond milk with 1 tablespoon lemon juice
Instructions:
Put almond milk, coconut milk, cherries, powdered erythritol, and vanilla extract in a blender
Mix until it's smooth
I filled up each popsicle mold about three quarters of the way to the top with the mixture
For a marbled look, add a little buttermilk to each mold and gently swirl it into the cherry mixture with a toothpick or skewer
Put popsicle sticks into the molds and freeze them for at least four hours, or until they are solid
To get the popsicles out of the molds, run them under warm water for a second or two and then pull them out gently
