Easy Instant Pot Beer Braised Short Ribs
Ingredients:
- 3 lbs beef short ribs
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup dark beer stout or porter
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Chopped fresh parsley for garnish
Instructions:
Season short ribs with salt and pepper
Turn Instant Pot to saut mode, heat vegetable oil, and sear short ribs on all sides until browned
Remove and set aside
Add diced onion and minced garlic to the pot, saut until softened
Pour in beef broth, scraping the bottom to deglaze
Stir in beer, tomato paste, Worcestershire sauce, thyme, rosemary, and add the bay leaf
Return short ribs to the pot, ensuring they are partially submerged in the liquid
Secure the Instant Pot lid, set to high pressure, and cook for 45 minutes
Once done, release pressure naturally for 10 minutes, then quick-release any remaining pressure
Remove short ribs and strain liquid
Skim fat off the top
Serve short ribs over mashed potatoes or polenta, drizzled with the reduced braising liquid
Garnish with fresh parsley
