Vegan Comfort Soup
A healthy and comforting vegan soup made with lentils, vegetables, and fragrant herbs. Ideal for a healthy and filling lunch!
Ingredients:
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 cup dried lentils, rinsed
- 1 can 14 oz diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 cups chopped kale or spinach
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions:
In a large pot, saut the onion, carrots, and celery until softened
Add the minced garlic and saut for an additional minute
Stir in the lentils, diced tomatoes, vegetable broth, cumin, smoked paprika, turmeric, salt, and pepper
Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes or until the lentils are tender
Add the chopped kale or spinach and cook until wilted
Finish the soup with lemon juice and adjust seasoning as needed
Serve hot, garnished with fresh parsley
