The Best Chicken and Dumplings Soup
This chicken and dumplings soup is the best way to feel better. There is tender chicken, tasty broth, and fluffy dumplings in this hearty and satisfying meal.
Ingredients:
- 1 whole chicken, cut into pieces
- 8 cups chicken broth
- 3 carrots, diced
- 3 celery stalks, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons butter, melted
Instructions:
In a large pot, combine chicken pieces, chicken broth, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper
Bring to a boil, then reduce heat and simmer for 45 minutes, or until chicken is cooked through and vegetables are tender
While the soup is simmering, prepare the dumplings
In a bowl, mix together flour, baking powder, and salt
Stir in milk and melted butter until a soft dough forms
Drop spoonfuls of dough into the simmering soup
