Salmon with Corn & Tomato Relish
This recipe features succulent salmon fillets topped with a vibrant and zesty corn and tomato relish. The combination of flavors creates a delightful dish that's perfect for any seafood lover.
Ingredients:
- 4 salmon fillets
- 2 cups corn kernels
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Get the oven ready by heating it up to 400F 200C
Add some olive oil, salt, and pepper to the salmon fillets
Arrange the salmon on a baking sheet
Bake for 12 to 15 minutes, or until the salmon is fully cooked
Mix corn kernels, cherry tomatoes, red onion, cilantro, lime juice, olive oil, salt, and pepper in a bowl while the salmon is cooking
This is the relish
Put a big spoonful of the corn and tomato relish on top of each salmon fillet when it's done
