Lemon Poke Cake Parfait
Ingredients:
- 1 box lemon cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup lemon curd
- 1 1/2 cups whipped cream
- 1/2 cup crushed graham crackers
- Fresh lemon slices for garnish
Instructions:
Preheat oven to 350F 175C and grease a 9x13-inch baking pan
In a large bowl, combine the lemon cake mix, water, vegetable oil, and eggs
Mix until well combined
Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean
While the cake is still warm, use the back of a wooden spoon to poke holes all over the cake
Warm the lemon curd in the microwave for 20-30 seconds and pour it over the warm cake, making sure it fills the holes
Allow the cake to cool completely
Once the cake is cooled, crumble it into small pieces
In serving glasses or bowls, layer the lemon cake crumbles, whipped cream, and crushed graham crackers
Repeat the layers until the glass or bowl is filled, ending with a dollop of whipped cream on top
Garnish with fresh lemon slices
Chill in the refrigerator for at least 1 hour before serving
